Ovos Verdes are a classic of Portuguese home cooking, commonly served as a starter or snack. Their name comes from the generous parsley mixed into the cooked egg yolks, giving the filling its characteristic green colour. The filled egg halves are coated in egg and breadcrumbs before being fried until golden.
