THE STORY
At the table
Queijo de Évora DOP is deeply rooted in the pastoral traditions of the Alentejo. It is produced from raw sheep’s milk and coagulated with cardoon flower, a traditional vegetable coagulant widely used in southern Portugal. During maturation, it develops an increasingly firm texture and a more pronounced, slightly piquant flavour.
