The designation brings together three cheeses with distinct recipes and characters: Castelo Branco, made from sheep’s milk; Amarelo da Beira Baixa, made with sheep’s and goat’s milk; and the more intense Picante da Beira Baixa, made with sheep’s and goat’s milk and distinguished by its longer maturation.
